Filet mignon in a spicy crust
For 4 people
Preparation time : 15 min
Cooking time : 50 min
Ingredients :
- 1 filet mignon
- 4 Albert Ménès cardamom pods
- 1 tsp. ground ginger Albert Ménès
- 1 tsp. Albert Ménès coriander seeds
- 1/2 tsp. Albert Ménès cinnamon
- 1 clove Albert Ménès
- 3 tbsp. olive oil
- 3 slices gingerbread
- 3 tbsp. white wine
- 25 g butter
- 2 cloves of garlic
- 1 sprig rosemary
- Albert Ménès Kampot salt and black pepper
Preparation :
1. Preheat the oven to 180°C.
2. Collect the cardamom seeds and crush them with all the spices in a mortar.
3. Crumble the gingerbread and mix with the olive oil, spices, salt and pepper until it forms a smooth paste.
4. Cover the filet mignon with this paste, pressing it down well. Place in an oven dish with the rosemary, garlic cloves, 2 tablespoons of water, wine and butter.
5. Bake in the oven for 50 mins.
