Tunisian Chakchouka
For 4 people
Preparation time : 20min
Cooking time : 40min
Ingredients :
· 4 tomatoes
· 4 peppers
· 1 onion
· 4 eggs
· 1 drizzle of olive oil
· 1 tea spoon of Albert Ménès ground cayenne pepper
· 1 tablespoon of Albert Ménès coriander leaves
· 1 tea spoon of Albert Ménès turmeric
· Pepper and salt
Preparation :
Start by finely mincing the onion before slicing the peppers and tomatoes into slender strips.
In a pan, gently fry the onion in olive oil for 5 minutes, then incorporate the peppers and tomatoes. Enhance the flavors with a seasoning of chili, turmeric, salt, and pepper, and simmer on a low flame for 30 minutes.
Carefully break the eggs over the savory mixture, allowing them to cook for an additional 5 minutes.
Just before serving, garnish with fresh coriander leaves and accompany with traditional Tunisian bread.
