Chocolate and Spice Mousse
Somewhere in a family album is this timeless image: a charming, rosy-cheeked toddler with a smile on his face and a face smeared with chocolate.
For 6 people
Preparation time: 15 minutes
Rest: 8 hours
Ingredients
- 200g dark chocolate
- 6 eggs
- 1 pinch Albert Ménès Ground Nutmeg
- 2 teaspoons Albert Ménès Organic Ground Cinnamon
- 1 pinch Salt
Preparation:
First, melt the dark chocolate with 2 tablespoons of water in a saucepan over a very low heat.
Secondly, separate the egg whites from the yolks. Add a pinch of salt to the egg whites, then whip them to stiff peaks, either in a food processor or with a whisk to make them creamier.
Mix the yolks with the melted chocolate. Add the nutmeg and cinnamon.
Finally, gently fold in the egg whites in three stages, taking care not to break them.
Pour the mousse into a pretty bowl and chill for 8 hours.
