The Little History of Zaatar:

Zaatar is a traditional Middle Eastern spice blend that has existed for several centuries. It is primarily used in Lebanese cuisine, but it is also very popular in neighboring countries such as Syria, Jordan, Iran, and Israel. This spice blend is highly valued for its flavors.

The Origin of "Zaatar" and Its Traditional Use

"Zaatar" in Arabic means "thyme." Thus, the name of the spice blend comes from its main ingredient. Zaatar is versatile in cooking and withstands heat well. It is often sprinkled on flatbread or grilled vegetables to add flavor and texture or used as an ingredient for a marinade.
In Lebanon, it is common to eat zaatar with white cheese or olive oil for breakfast. The blend is also used in salads, soups, and meat dishes. To add a touch of acidity, lemon or vinegar can be included.

Fair Trade Lebanon Association

While the composition of Zaatar and its ingredients vary from region to region, Albert Ménès' Lebanese Zaatar comes from the Qwazah cooperative, supported by the Fair Trade Lebanon association. This mixed cooperative consists of about thirty people.
The Qwazah cooperative produces high-quality zaatar with selected thyme varieties from the southern region of Lebanon. This blend, selected by Albert Ménès, features all the typical flavors of a zaatar. To fully enjoy its flavors, use zaatar with quality olive oil for an authentic Middle Eastern taste experience.
Since 2010, the NGO Fair Trade Lebanon has been helping and uniting family farms and cooperatives across Lebanon. The goal is to assist producers in developing through training, equipment, and market opportunities.
The cooperative is located in southern Lebanon, a region known for its dry, favorable climate and the quality of its thyme.

How do you use Zaatar in cooking?

Zaatar is a perfect seasoning for vegetables in salads, mixed with oil to brush on meat before cooking, or simply to flavour a hummus.

It's very easy to use, and can be eaten raw or cooked, in the oven or on the barbecue.

You can also use zaatar in your aperitifs, as in labneh or to flavour hummus.
