La piperade
Ingrédients pour la piperade :
Pour 6 personnes
- 3 oignons
- 4 poivrons verts
- 800g de tomates
- Sel et poivre
- 80g de Poivrons Piquillos à l'ail en lamelles
- 4 piments rouges
- 3 c.à.s d'huile d'olive
- 1 c.às. de sucre en poudre
La préparation de la piperade basque :
Commencez par enlever la peau des poivrons, piments et tomates.
Coupes vos oignons en dés, les poivrons et piments en lamelles et vos tomates en quarts.
Dans une poêle, versez votre huile puis y ajouter vos oignons pour les faire cuire quelques minutes à feu doux.
Ajoutez ensuite vos poivrons et piments et laissez mijoter en mélangeant de temps en temps.
Ajoutez ensuite les morceaux de tomates, le sel, le sucre et le poivre.
Faites cuire le tout à feu vif pendant 10 minutes puis 20 minutes environ à feu moyen.
Vous pouvez ajouter des œufs en fin de cuisson. Il vous faudra 2 œufs au plat qui seront à ajouter sur votre piperade.
Vous pouvez accompagner cette piperade d’une viande ou d’un poisson grillé mais également de jambon de Bayonne.
